Simple Japanese Tofu Omelette 
For the career woman juggling between work and cooking for the family, we need a quick easy dish. Normally, I will stock tofu in my fridge as it's the versatile ingredient for adding a side dish. One can never go wrong with cooking tofu, be it fried or steam. Moreover, few people are allergy to tofu.



The ingredients needed for this dish are:
1 tube of  Japanese tofu
2 eggs, beaten
1 onion
1 stalk of celery
Salt and pepper



Method
A. Preparations before cooking
1. Peel off the skin, washed and slice the onion
2. Wash and cut the celery into 4 cm length
3. Cut the tofu through the plastic tube into half, then press out of the tube from the corners/end. Then         slice into about 0.5 cm thickness.

B
1. Heat the wok/pan with 2tbsp oil
2. Fry the tofu until slight brown on both sides. Take out.
3. Add 1 tbsp of oil, sauté the onions, add a pinch of salt.
3. Add egg mixture, lower heat. Add the fried tofu slices. Flip the the eggs to cover the tofu.
4. Quickly add the celery and add pepper and salt to taste. Stir and mix all. Can cut into smaller sizes while stirring.

* Celery can be omitted or replaced by spring onions or leek or chinese chives (local name: kuchai leaves) depending on individual taste and preference.
