Gingerbread Man

Gingerbread man and Fat Bottom people. 


I have been longing to make ginger bread man for a long time. Finally, I found time to make it two weekends ago. It turns out not so handsome due to my poor decorating skills :(





I made some fat bottom people and a few Christmas Trees


Ingredients
450 g plain flour, keep extra for dusting
115 g butter
2 tsp ground ginger
1 tsp ground mixed spice (* 1 tsp ground cinnamon )
2 tsp bicarbonate of soda
90 g/  3 oz honey and 2 Tbsp water
100 g light brown sugar (*muscovado sugar)
1 egg, lightly beaten

To decorate
Currants
Glace cherries
160 g icing sugar
3-4 tsp water
Method
1. Preheat oven to 160 C / Gas mark 3. Grease 4 baking sheets
2. Shift the flour, ginger, mixed spice and bicarbonate of soda into a large bowl
3. Put the butter, golden syrup and sugar in a sauce pan stir over low heat until melted. Let cool 5 mins
4. Pour into the dry ingredients and add egg. Mix together to form a dough.
5. Roll out the dough into 3 mm / 1/8 inch thick and cut out gingerbread man and other shapes with
    cutter. Place onto baking sheets. Re-knead and re-roll the trimmings until all done.
6. Decorate with currants for eyes and red cherries for mouth, chocolate chips and nuts for buttons.
7. Bake in preheat oven for 15-20 mins or until firm. Transfer the cookies to wire racks to cool
    completely.
8. Place the icing sugar and water in a small bowl, mix together until thick. Put into icing bag and pipe
    the bows and buttons onto the Gingerbread man, Fat-bottom man and Christmas trees cookies
